Ingredients:
Cauliflower:
1 Medium cauliflower sliced in small florets, or 1/2" thick steaks or wedges.
2 Tbsp olive oil
2 Tbsp Lucky 13 (season to taste)
For the Cilantro Dressing:
half an avocado
1/4 cup Greek yogurt
1/2 cup water (as needed to adjust consistency)
1 cup cilantro leaves and stems
1 small clove of garlic
1/2 teaspoon Lucky 13
1 small squeeze of lime juice
Topping:
1/4 cup Roasted Pepitas
Step 1-
Toss cauliflower with olive oil and Lucky 13, toss to evenly coat.
Spread the cauliflower evenly on a baking sheet and bake at 425˚F for 15-20 minutes, until cauliflower reaches desired crispiness
Dressing:
Step 1:
Add all dressing ingredients to a food processor or blender. Pulse until smooth.
Drizzle dressing over cauliflower once plated and sprinkle pepitas over top as desired and enjoy!
